BBQ Chicken of the Woods

A vegan twist twist on classic BBQ pulled chicken sandwiches, using the meaty texture of chicken of the woods mushrooms.

Ingredients:

- 3 cups shredded chicken of the woods mushroom

- 1 cup BBQ sauce (homemade or store-bought)

- 1 onion, diced

- 2 cloves garlic, minced

- 1 tablespoon olive oil

- Salt and pepper to taste

- Hamburger buns or sandwich rolls, for serving

- Coleslaw (optional), for serving

Instructions:

1. Prepare the mushrooms -

Clean the chicken of the woods mushrooms by wiping them gently with a damp cloth or rinsing them briefly under cold water.

Tear them into small, bite-sized pieces resembling shredded chicken.

2. Sautee -

In a large skillet or frying pan, heat the olive oil over medium heat.

Add the diced onion and minced garlic.

Sauté for 2-3 minutes until softened and fragrant.

3. Add the mushrooms -

Add the shredded chicken of the woods mushrooms to the skillet with the onions and garlic.

Spread them out in an even layer.

4. Water fry -

Pour a small amount of water (about 1/4 cup) over the mushrooms in the skillet.

Cover the skillet with a lid and let the mushrooms steam for 5-7 minutes, or until they are tender.

5. Add BBQ Sauce -

Once the mushrooms are tender, remove the lid from the skillet.

Add the BBQ sauce to the skillet and stir to coat the mushrooms evenly.

Allow the mixture to simmer for an additional 2-3 minutes, stirring occasionally.

6. Season -

Taste the BBQ shredded chicken of the woods and adjust the seasoning with salt and pepper if necessary.

7. Serve -

Serve the BBQ shredded chicken of the woods on hamburger buns or sandwich rolls.

Optionally, top with coleslaw for added crunch and freshness.
